1 cup vegetable oil
2 cups sugar
4 eggs
3 1/2 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
2 teaspoons baking soda
1 1/2 teaspoon salt
2/3 cup water
14-16 oz can of pumpkin

It makes 2 loaves.
Pour into 2 greased loaf pans and bake at 350 degrees for 1 hour and 10 minutes....until you can stick a knife in it and have it come out clean.

ReplyDeleteI attempted to make this last night only to realize halfway in that I was out of eggs. Tried again just now and put cumin in instead of cinnamon (?). Said I'm not giving up now and got as much as as I could! I'll let you know if a pinch of cumin is a game changer...
